With sand, you can still use a gravel syphon. Hold the syphon about 1" above the sand, move it in tight circles, and it will create a vortex hoovering up the dirt and poop, but not the sand. Afterwards, make sure you give the sand a little stir - slowly to not kick it up into the water column - to get rid of any trapped gasses. the greener side::

Take off the main "pipe," leaving just the soft tube. Use that about an inch above the sand and you should be fine. If you do suck up the sand, it's easy enough just to dump the water out and throw it back in by hand.
my cichlids have dug caves and tunnels in my sand and under the rocks. so cleaning the sand is no fun!!! You need sand the right size. Fine sand will get sucked into those "gravel cleaner" thingies, but coarse sand or gravel will not. If you can't siphon the dirt out without all your sand going up the hose too, your sand is probably too fine-grained.

You can get a siphon cleaner, where you siphon off some of the water while simultaneously vacuuming out the junk in the gravel. The weight of the gravel should keep it from being sucked up, but sometimes the gravel will completely fill the vacuum end. I put the vacuum end at a slight angle vs vertical and that seems to reduce that from happening.
Once in a while I siphon off some water to bucket, move the fish to this location temporarily and empty the contents of the tank. Rinse the gravel off really well in bucket with holes drilled in the bottom or in a very large colander. I've never lost a fish doing that.
they have these under water vaccumns and its like a tube that sucks up the dirt and poop all between the rocks and pebbles but it keeps most water in the tank and the fish cant get sucked into it. the pebbles go up in the tube a bit but it cleans it very well without all the messy cloudy water when youre done! you can get it at any petstore www.nextag.com <-- they have some pics on that site. :)
